It’s mid January, and our clean eating goals are still going strong!  Matthew and Oli are extremely dairy sensitive, so we keep Silk Coconut Milk in our house.   It was actually recommended by our pediatrician after he didn’t handle the whole milk swap at age one. Since Silk Coconut Milk is already in our refrigerator it has started replacing dairy milk in my morning coffee and Piper enjoys it over her morning cereal.  Silk Milk is the perfect everyday milk for your dairy-free needs!  And if you need a sweet healthy ice cream, you have to try this recipe using Silk Coconut Milk.

I just learned about Silk Dairy-Free Yogurt Alternatives,  (available in 6 different flavors).   An unbelievably smooth and creamy non-dairy treat, Silk Dairy-Free Yogurt Alternative is cholesterol-free, vegetarian and contains 6g of plant-based protein.  Little kids are always snacking on yogurt at our play dates, and now Oli can join in.    We bought Plain and Vanilla, both are so good.  Silk Yogurt is the perfect everyday snack, breakfast, etc. for your dairy-free needs!

Both Silk Coconut Milk and Silk Dairy-Free Yogurt Alternative can be found in the dairy section of your local Walmart, be on the lookout for their new packaging!  #samesilkysmoothtaste

This soup was a happy accident, I went to grab the Plain Silk Dairy-Free Yogurt Alternative from my refrigerator to dollup into the middle and accidentally grabbed the Vanilla Silk Dairy-Free Yogurt.    Surprisingly the creamy sweet flavor went amazingly well with the spice of the curry, cumin and hot sauce.  That sweet & spicy combination always makes me happy.

This soup is so good for you!  It has two of my favorite winter ingredients in it, sweet potatos and leeks.  Matthew says I cook leeks wrong, he only likes the white part cut into circles and with none of the dark greens.  I like the dark green part of the leeks, it’s totally up to you.

  • Leeks are an excellent source of vitamin K. They are very good source of manganese, vitamin B6, copper, iron, folate and vitamin C. Leeks are also a good source of vitamin A, dietary fiber, magnesium, vitamin E, calcium and omega-3 fatty acids.
  • Sweet potatoes are an excellent source of vitamin A. They are also a very good source of vitamin C, manganese, copper, pantothenic acid and vitamin B6. Additionally, they are a good source of potassium, dietary fiber, niacin, vitamin B1, vitamin B2 and phosphorus.

And the creaminess from the Silk Coconut Milk and Silk Dairy-Free Yogurt alternative makes it taste so rich, you won’t believe it’s healthy for you!

If you have little ones, I take an extra step of pureeing a heartier mix of the veggies without as much liquid into a healthy baby food.  And the leeks will grow if you put the discarded roots in water!
