It’s mid January, and our clean eating goals are still going strong!  Matthew and Oli are extremely dairy sensitive, so we keep Silk Coconut Milk in our house.   It was actually recommended by our pediatrician after he didn’t handle the whole milk swap at age one. This soup was a happy accident, I went to grab the Plain Silk Dairy-Free Yogurt Alternative from my refrigerator to dollup into the middle and accidentally grabbed the Vanilla Silk Dairy-Free Yogurt.    Surprisingly the creamy sweet flavor went amazingly well with the spice of the curry, cumin and hot sauce.  That sweet & spicy combination always makes me happy.

This soup is so good for you!  It has two of my favorite winter ingredients in it, sweet potatos and leeks.  Matthew says I cook leeks wrong, he only likes the white part cut into circles and with none of the dark greens.  I like the dark green part of the leeks, it’s totally up to you.

  • Leeks are an excellent source of vitamin K. They are very good source of manganese, vitamin B6, copper, iron, folate and vitamin C. Leeks are also a good source of vitamin A, dietary fiber, magnesium, vitamin E, calcium and omega-3 fatty acids.
  • Sweet potatoes are an excellent source of vitamin A. They are also a very good source of vitamin C, manganese, copper, pantothenic acid and vitamin B6. Additionally, they are a good source of potassium, dietary fiber, niacin, vitamin B1, vitamin B2 and phosphorus.

And the creaminess from the Silk Coconut Milk and Silk Dairy-Free Yogurt alternative makes it taste so rich, you won’t believe it’s healthy for you!

If you have little ones, I take an extra step of pureeing a heartier mix of the veggies without as much liquid into a healthy baby food.  And the leeks will grow if you put the discarded roots in water!

Leek & Sweet Potato Soup

Leek & Sweet Potato Soup


  • 1 onion, chopped
  • 3 cloves garlic
  • 2 tsp ground cumin
  • 2 tsp curry mix
  • 1 tbsp olive oil
  • 2 or 3 large leeks (or 4 or 5 small leeks)
  • 4 cups vegetable stock
  • 4 sweet potatoes, peeled and chopped;
  • 2 cups Silk coconut milk
  • 1 cup Silk yogurt alternative.
  • Sea salt and freshly ground black pepper to taste
  • Peanuts, Hot Sauce & Cilantro - optional toppings


  1. Sauté the onions in a dutch oven over a medium heat for few minutes. Stir frequently to prevent the onions from burning. Add the garlic and leeks to the pan and cook for approximately 3-4 minutes to allow everything to soften.
  2. Sprinkle in the cumin and curried mix and combine well.
  3. Add the vegetable stock and the sweet potatoes. Bring to a boil then allow to simmer for approximately 20 minutes, or until the sweet potatoes are soft.
  4. Remove the soup from the heat and slowly mix in the Silk coconut milk. Season with salt and pepper to taste.
  5. Puree the soup in a blender and serve with a dollop of Silk Yogurt Alternative, crushed peanuts and cilantro.
