Vegan "Curried" Chicken Salad Sandwiches



  • 1 Package of vegan chicken or real (your call) (chopped) (Gardein is good)
  • 3/4 cup golden raisins
  • 3/4 cup Veganaise
  • 1/2-3/4 cup nuts (chopped) (We had almonds - but use whatever nut you like)
  • Splash of Lemon Juice
  • 1 chopped apple
  • 1 stalk chopped celery
  • 2 tablespoon chopped scallion
  • 2 tbsp curry powder
  • Wolferman's Gourmet English Muffins


  1. Cook the "Chicken" however the package says. Let cool. Mix everything together. Serve cold on toasted Wolferman's English muffins!
